Cavas - Portell Trepat Sublim

Pink cava of very limited and numbered production. The wine base for the elaboration of this exceptional cava is the result of coupage of two wines bases elaborated from grapes of old vines of Trepat. The first is a young wine fermented in bathtubs of steel to temperature controlled and the second fermented and aged during 4 months in new barrels of oak and applying periodically the technique of battonage. It has been elaborated according to the method "Champenoise" and following our ancestral tradition. The result is a cava of delicate and very shining cherry pink color with fine bubble that forms elegant rosaries and a persistent crown. The aromas are clean, clearly with fruit (strawberry, mature grenade...) harmonized with the aromas of the raising and the balsamic and toasted notes of their raising and of the wood. In mouth is well structured, creamed and balanced with good persistence and excellent end. Their body and maturity make it suitable for plates with complex flavors, spice meals and meals with a certain structure.
