Winemaking
For the Glatim, we highlight minimal intervention, cold pre-maceration, and extended maceration at controlled temperature in stainless steel tanks, aimed at extracting the maximum potential of the variety. After fermentation, 20% of the wine undergoes a short aging in 300 L French oak barrels, fine-grained and medium toasted, in their second year. After 4 months, the final blending is done with the remaining wine kept in the tank, preserving freshness and youthful attributes. The final aging in the bottle further refines the tannins.
Tasting Notes
Dark redcurrant color with violet hues. A medium-low bodied wine, characteristic of the variety. In the glass, ripe black fruit is immediately evident, with clear aromas of blueberries and wild blackberries, Morello cherries, and black plums, wrapped in balsamic notes over a spiced background of black pepper, juniper, and clove. On the palate, it is smooth and silky, with polished, enveloping tannins that, combined with pronounced acidity, make it very refreshing. This subtle tannic structure provides complexity that unfolds as the wine opens, revealing delicate hints of violet and rose, intertwined with memories of lavender and licorice. A refined elegance to be savored slowly.
